3/4 cup dried elderberries
3 cups water
1 tsp cinnamon
4 whole cloves (or 1 tsp ground cloves)
1 tsp ground ginger
1 cup raw honey
Bring the elderberries, water, cinnamon, cloves, and ginger to a boil. Reduce the heat, cover, and simmer until the liquid has reduced by half – about 40 minutes. Allow to cool, then drain using a fine strainer or cheesecloth. Add honey and mix well. Store in an airtight glass container in the refrigerator for up to two months. Add to juice, tea, or on cereal.
